  • Uncle Lee's naturally grown Bai Mu Dan White Tea (also known as "White Peony") is grown in the mountains of the Fujian Province of China and is from the most tender young buds and leaves that remain after the legendary Silver Needle has been harvested. White tea (youngest camellia sinensis) undergoes very little processing (steaming, rolling and oxidation) which leaves the appearance and cell structure of the leaves nearly unaltered. This purity may be what some researchers have found that causes white teas to have a greater concentration of cancer fighting antioxidants than all other teas. White teas have all of the benefits of green tea and are the most delicate of all, their taste being subtle, complex and mildly sweet. Because there is very little processing with white tea, the caffeine content is also fairly low at approximately 15 to 20 mg per cup. In comparison, green tea contains 20 to 40 mg per cup, black tea contains 50 to 55 mg per 8 oz. cup and common coffee contains about 100 to 120 mg per cup on the average. It is great for hospitality when treating a large number of guests at a party or event. For this one, we have left the white tea leaves untouched by any other additives for those that love the original flavor and subtle taste of White Tea.

Instructions

  • Hot Serving: Place one tea bag into an 8 oz empty cup. Pour 75C to 85C degree of hot water over tea bag and steep for 2 to 5 minutes depending on desired strength.
  • Iced Serving: For one quart of iced tea, pour 2 cups of boiling water over 4 tea bags. Brew 4 to 6 minutes. Then add 2 cups of cold water and chill to desired temperature for serving.
